Apple Cider Variations

As I look at getting ready for making my cider this year I thought I might separate a a gallon or two and add some other flavorings. Some obvious choices like cinnamon or other spices, honey or fruit come to mind.

Now since I haven't done this before I ask the folks who have....Anyone have experience and tips?
A good flavoring to volume suggestions?
Things I may need to take into account as I proceed with this?
 
I used fresh ginger, but waaaaaaaay too much. It might have been nice, but ended up undrinkable. And I overdid the cinnamon sticks too, so I basically wasted it all, even after blending with plain cider.
I also tested using several sugars for back sweetening, and honey was far and away the best flavor.
The proportions are critical as well as how long you leave them in. I've looked at some threads on HomeBrewTalk forums, and found one that looked like a really good source of information, but I don't have a link, sorry. Their cider forum is here.
