The beer I brewed at my brew day did something I've never seen, it reached a mid level krausen after about 2 days, then dropped back for a day, then erupted again and filled the 6.5 carboy to the airlock on day 5 or 6, and now has dropped back again.
The OG was 1.072, it's been 7 days and was at 1.022 last night, and still has some airlock activity. The sample did not have any indication of infection, but if it does, it tastes good.
I used American II yeast from my 'bank' with a 2 qt starter, 1 qt to start and another qt after about 24 hrs. I did not decant the starter as I would normally do because I knew it was still quite active.
Has anyone seen this?
