Kombucha and Jun Teas

Joe,
I have been brewing some Kombucha for the past year or so, with some pretty good results. We may even be addressing this topic in an upcoming meeting. But if you have any questions before then, feel free to let me know.
 
Thanks! I just started my third batch of Jun Tea and split the scoby to two jugs. The only question at this point is carbonation. I am not getting as much effervescence as I would like. When I drain the tea from fermenter I seal it in half gallon jugs. I got a little pressure release when I open them but the tea is still flat. Do you add more fermentables to the tea after bottling?
 
I'm not familiar with Jun Teas. I will say that the carbonation in Kombuchas is certainly aided by additional sugars in a sealed vessel. I often use an empty Corny-keg and force carbonate with CO2. They I use a Blichman Beer Gun to bottle.
 
I have some pretty big mothers at this point. I make 5 gallon batches.

I have a wide-mouth glass carboy that I can reach into and collect the mother between batches and during cleaning. Probably yields about 4.5 gallons.
