Oak aging Barrels

I am looking at buying some wood barrels. I have found a cooperage in Kentucky that sell new and used barrels starting at 5 gallons and up. If I can get together an order of 5 or more barrels they will ship them for free. Used 5 gallon Bourbon aging barrels start at $45. Anyone interested? The reply to my inquiry is below.

Oak Wood Options: American oak, French oak, Chinkapin oak, Sessile oak, Appalachian oak, Hungarian oak, Eastern European oak.
Oak Barrel Char and Toast levels – No additional charge:
Light - Mild aromas; fresh vanilla flavors
Medium - Toasty aromas; more complex flavors
Medium Long - Slightly spicy; longer toast over a lower fire
Medium Plus - More intense vanilla & spice; rich flavors
Heavy - Smoky, peppery; sweet roasted flavors (coffee)
Toast levels – charred to your liking. Request Toasted heads at no additional charge. The various levels of charring have different effects on the compounds and so flavors the charred oak imparts to the maturing spirit. Heavy charring will cause cracks in the surface of the oak giving it an alligator skin-like appearance.
Note: Our stock is very limited and constantly changing. Also, Shipping May Be Delayed because of Weather conditions in certain areas.

My personal opinion is that 5 gallons is too small. I recommend 10 or 15 gallon barrels. 5 gallon barrels impart too much oak too quickly. You'll need to transfer it out quickly or it'll taste like oak. Just oak. 10 and 15 gallon barrels offer a better surface to volume ratios, and are still somewhat reasonable for batch sizing.
Just my opinion.

I am definitely interested in a barrel or 2. Do you know if the "burbon, Scotch, Tequila" barrels....can you choose or is it random?

Yes, there can be options to choose either a Bourbon, Scotch or tequila barrel. The barrels all still have residual flavors in them and wet bottoms.

Wine barrel - French oak options: ( RED - Cabernet Sauvignon, Malbec, Merlot ) (WHITE -Chardonnay, Pinot grigio, Riesling, Sauvignon blanc ).

It's not just the Barrel, then it's all the brewing... Time, ingredients. I found that about 2 weeks turn around on 15g fresh dumped barrelsfor the first 2-3 batches is just about right. Otherwise, oak bomb. That would mean my next 3 kid weekends would all day long brewing sessions... Which I wouldn't mind, but Jes wouldn't be too excited about. Maybe next time around...
